Beef, Sweet Potato and Bean Layered Bake

This is a twist on a ragu-style sauce enriched with beans and layered with sweet potato slices. It can be made ahead and frozen for a speedier meal another day.

Ingredients

400glean minced beef
1onion
peeled and finely chopped
1carrot
scrubbed and finely diced
1 stickcelery
finely chopped
2cloves of garlic
peeled and crushed
1can of chopped tomatoes
0.5beef stock cube
crumbled
1 canmixed beans in water
drained
1 tspdried oregano
800gsweet potato
washed, peeled and cut into 2-3mm slices
25gcheddar cheese
grated
Instructions
Step 1
Preheat the oven to 200 degrees C/Gas Mark 6.
Step 2
In a large non-stick pan over low to medium heat, brown the minced beef with the onions, stirring frequently. This will take 10-12 minutes.
Step 3
Add the carrot, celery and garlic and cook for a further 5 minutes.
Step 4
Add in the canned tomatoes, crumbled stock cube, oregano and 200ml of water. Bring the mixture to a simmer and cook for 15 minutes until the vegetables are tender.
Step 5
Add the beans to the pan and stir well. Turn off the heat.
Step 6
Put a single layer of sweet potato rings in a deep ovenproof dish. Cover with a layer of meat mixture. Alternate the sweet potato layers with the meat mixture, making sure to finish with a layer of sweet potato.
Step 7
Sprinkle with the grated cheese and bake in the centre of the oven for 35-40 minutes until golden brown. Delicious served with green beans and tender stem broccoli.
Step 8
The recipe can be made up to Step 6 and frozen. Just add grated cheese and bake. If cooking from frozen add an extra 10-15 minutes to the cooking time.
