Step 1
Make the caramel. Have all ingredients measured out and ready to go. In a medium saucepan, combine the sugar and water. Cook over medium heat, undisturbed, until the sugar is dissolved, the caramel reaches a deep amber color and you begin to see wisps of smoke.
Step 2
Immediately whisk in the heavy cream, then the butter. Whisk the mixture vigorously, as it will begin to bubble up and can pour over the sides.
Step 3
Remove from heat and stir in the vanilla and miso until smooth. Set aside to cool
