Instructions

Step 1
Preheat oven to 180°C. In a mixing bowl, cream the softened butter and sugar until pale in color.
Step 2
Add your eggs, one at a time. When mixing in the second egg add 2 tbsp of the flour and mix well.
Step 3
Add the rest of the eggs, flour and vanilla essence and mix till you get a thickened batter.
Step 4
Divide into 2 buttered 23cm cake tins.
Step 5
Bake for 20/25min until golden and a skewer comes out clean.
Step 6
Let the cakes cool then spread the jam and sandwich them together. Serve with cream or plain.
