Instructions
Step 1
Peel the parsnips and chop them into even-sized pieces to ensure they cook evenly.
Step 2
Place the parsnip pieces in a medium saucepan and cover them with water. Add a pinch of salt and bring to a boil. Simmer for 10-15 minutes, or until the parsnips are tender when pierced with a fork.

Drain the cooked parsnips and transfer them to a food processor or blender. Add the butter and double cream, blending until smooth.
Step 4
Season the purée with salt, pepper, and a pinch of freshly grated nutmeg. Blend again to incorporate the flavors.
Step 5
If the purée is too thick, add a splash of warm cream or milk to reach your desired consistency. Blend until velvety smooth.
