Instructions
Step 1
Preheat oven to 400º F (200º C)

Step 2
In a large mixing bowl, whisk together honey, soy sauce, olive oil, minced garlic, dried thyme, salt and pepper.

Step 3
Add the chicken thighs to the bowl and coat them well with the marinade. Let them marinate for at least 15 minutes.

Step 4
In a large baking dish, arrange the halved red potatoes in a single layer. Drizzle with olive oil and season with salt and pepper. Toss to coat.

Step 5
Place the marinated chicken thighs on top of the potatoes, pouring any remaining marinade over the chicken.
Step 6
Bake in the preheated oven for 20 minutes.

Step 7
After 20 minutes, remove the baking dish from the oven and add the green beans around the chicken and potatoes. Toss the green beans in the marinade left in the dish.

Step 8
Return the dish to the oven and bake for an additional 15-20 minutes, or until the chicken is cooked through (165º F or 74º C) and the potatoes are tender.

Step 9
Once done, remove from the oven and let it rest for a few minutes. Garnish with fresh parsley before serving.
