1 Tbspunflavored gelatin

3 tbspswater

⅓ cupgrapefruit juice

1 ½ cupsheavy cream
chilled

1 x 397gcan sweetened condensed milk

1 cuppassionfruit pulp
or unsweetened juice

1 Tbspgrapefruit zest

½ cuppassionfruit pulp
or unsweetened juice

3 tbspswhite sugar

1 cupheavy cream

½ Tbspvanilla bean paste

3 tbspspowdered sugar

Instructions
Step 1
Mix the gelatin and water in a microwave-safe cup, and microwave for 30 seconds to melt the gelatin. Stir to ensure there are no clumps. Mix in the grapefruit juice to cool the liquid.
Step 2
In a blender, combine the heavy cream, sweetened condensed milk, passionfruit pulp, gelatin-grapefruit mixture, and grapefruit zest. Blend until the cream thickens, which should take roughly five minutes.
Step 3
Pour into 7 serving bowls and refrigerate for at least 3 hours.
Step 4
Prepare the passionfruit sauce by combining passionfruit juice and sugar in a saucepan over medium heat. When the sugar has fully dissolved, remove the mixture from the heat and allow it to cool.
Step 5
Prepare the vanilla whipped cream by whipping the cream, vanilla, and powdered sugar with an electric hand mixer or a stand mixer for five minutes, or until stiff peaks form.
Step 6
When fully chilled, remove the mousse from the fridge and top with passionfruit sauce and vanilla whipped cream.
Step 7
Serve and enjoy!
