Instructions
1. Melt the chocolate
Step 1
Gently melt the vegan white chocolate in a small pot or in the microwave, stirring often to avoid overheating.
2. Blend the mousse
Step 2
In a blender, combine the silken tofu, vanilla extract, lemon zest and juice, and a pinch of salt. Pour in the melted chocolate and blend until the mixture is smooth and silky.
3. Chill

Divide the mousse into serving glasses or bowls and refrigerate for at least 2 hours, or until set.
4. Marinate the apricots
Step 4
In a small bowl, toss the sliced apricots with maple syrup, lemon juice and vanilla. Cover and refrigerate for at least 30 minutes to let the flavors meld.
5. Assemble and serve

Spoon the marinated apricots over the chilled mousse, along with a bit of syrup from the bowl. Garnish with mint leaves, toasted almonds, or lemon zest if desired.
