For the Crumble

400gsausage meat
removed from casings if using sausages

1yellow capsicum
finely diced

1tomato
medium, finely chopped or grated

1spring onion
sliced, optional

½ tspsmoked paprika
or favourite spice, optional

Salt

pepper
to taste
For the Mash
Instructions
Prepare Potatoes
Step 1
Place peeled, chopped potatoes in a pot of cold salted water. Bring to the boil and simmer until fork-tender (10–15 minutes). Drain well, then mash with butter, salt, and splash of milk if using. Beat in the 2 eggs quickly while mash is still warm. Set aside.
Cook the sausage crumble
Step 2
Heat a pan over medium-high heat. Add sausage meat and break it apart with a spatula into a crumble. Once mostly browned, add capsicum and tomato. Cook until capsicum is soft and tomato mostly broken down (6–8 mins). Add spring onion and season to taste. Simmer for a couple of minutes to meld flavours.
Serve
Step 3
Spoon creamy mash onto plates. Top generously with hot sausage crumble. Optional sides: steamed green beans, peas, or a crisp salad.
