Oreo Dark Chocolate Fudgy Brownies

Adding Oreos takes brownies to another insane level! These brownies are made with dark chocolate and are so fudgy that after just one bite, you will no longer search for your perfect brownie! INGREDIENTS 200g butter 200g dark chocolate 100ml brewed coffee (see notes) 3 eggs 120g brown sugar 120g white sugar 80g spelt flour (see notes) 40g cocoa 2 packets of Oreos DIRECTIONS 1. Pre-heat the oven to 175 and line a square or rectangle baking tin (mine is just slightly larger than a 8" x 8"). 2. Melt the butter and chocolate together. 3. When melted, stir in the coffee. 4. In a separate bowl, whisk the eggs and sugar together. 5. Add the chocolate mixture and whisk until just combined. 6. Add the flour and cocoa, and again, just whisk until everything is mixed in. 7. Pour half the batter into the prepared pan. Top with as many Oreos as you need (I used 12). Cover with the remaining batter. 8. Bake for around 25-30 minutes. The brownies are ready when the top is firm (although an inserted skewer may have still have a little batter when pulled out - this is okay, we want fudgy brownies). 9. Allow to cool. 10. Separate the other packet of Oreos, scraping off the cream into a bowl. Heat the cream slowly in the microwave until melted. Drizzle or slather over the top. Just one packet doesn't produce that much cream, so if you want a thicker coat, use more. 11. Sprinkle with the leftover Oreos (the ones you've removed the cream from). Slice and enjoy (see notes). NOTES 1. I use scales and offer metric measurements as I believe these are the most accurate. 2. I absolutely recommend coffee in all my chocolate cakes as it deepens the flavor. if you want to omit it, just add the same quantity of milk instead. 3. You can substitute regular flour for spelt. 4. I originally sliced the brownies into 12 large pieces. However, I couldn't see the Oreos in the middle of them, so I sliced them into smaller pieces (mainly for photographic/informational purposes).
