Instructions

Seal the Chicken

Heat a pan over high heat with a splash of olive oil.

Add the seasoned diced chicken (do not stir right away).

Let it cook 2 minutes per side to seal in the juices (inside should still be raw).

Remove and set aside on a plate.

2. Make the Stir-Fry Base

In the same pan (with chicken juices), add another splash of oil over low heat.

Add the finely chopped garlic and onion.

Season with salt and sauté gently for ~15 minutes, stirring occasionally.

3. Add Tomato and Curry

Mix in 2–3 tbsp crushed tomato.

Add 1–3 tbsp curry powder, depending on your spice preference.

Add whipping cream and stir everything together.

Cook over medium to low heat, stirring gently.
