Molten Lava Nutella Cupcakes (made with spelt flour)

These molten lava cupcakes are so decadent you only need one. With firm edges and beyond gooey centres, serve them warm, even topped with a little ice-cream! These are made with spelt flour, but you can use regular (or even gluten free) flour. INGREDIENTS 100g butter 50g milk chocolate 75g Nutella 50ml brewed coffee (or milk) 2 eggs 60g brown sugar 60g white sugar 40g spelt flour (you can use regular flour) 15g cocoa 6 teaspoons Nutella (extra to the above) 40g white chocolate (cut into chunks) Icing sugar (to sprinkle) INSTRUCTIONS 1. Pre-heat the oven to 175°C. Prepare a muffin tray with 6 large muffin cases. 2. Add the butter, chocolate, Nutella and coffee/milk to a pan and slowly heat until the butter has just melted. 3. Whisk the eggs and sugars together then pour in the chocolate mixture and whisk until everything is combined. 4. Add the flour and cocoa and whisk just until everything is well incorporated. 5. Fill your muffin cases/moulds about ¾ of the way full, and then add one teaspoon of Nutella on top of each one. Cover with more cake batter until almost to the top (the cakes will not rise a huge deal). 6. Sprinkle with tons of huge chunks of white chocolate and then bake for around 13-15 minutes. Mine were baked for just 13 minutes, so if you would like them a little firmer, just bake for a few more minutes. 7. Remove from the oven and let them cool down until just warm (otherwise they will be too runny). When ready to eat, sprinkle them with icing sugar and throw on some ice-cream, if you like!
