Instructions

Step 1
Heat the oil and cook onions for 5 mins
Step 2
Add chilli and spices and cook for 1 min, stirring
Step 3
Add coconut milk, sugar and sweet potato and bring to boil, then simmer covered until Sweet potato tender
Step 4
Cut chicken into chunks and add to the stew. Cover and cook for 15 mins, until chicken and sweet potato cooked.
Step 5
To thicken, mash the sweet potato and serve with rice
