Instructions

Step 1
1. Preheat oven to 215°C (420°F).
Step 2
2. In a bowl, cream butter and sugar together.
Step 3
3. Add the egg and mix well.
Step 4
4. Stir in the mashed pumpkin until combined.
Step 5
5. Sift in the self-raising flour, then mix by hand until just combined – don’t overmix.
Step 6
6. Turn out dough onto a lightly floured surface, gently shape, and cut into scones.
Step 7
7. Place on a lined baking tray and bake for 15 minutes, or until golden on top.
