Ingredients

1chicken
whole, organic

1brown onion
large, finely chopped

1celery stick
finely chopped

2garlic cloves
large, chopped

6sprigs fresh thyme

3 Tbspfresh parsley

water
Enough filtered, to cover the whole chicken, dependent on the chicken and your pan/pot

1 Tbspapple cider vinegar

1 tspsalt
seaweed salt

1 tsppeppercorns
Instructions
Step 1
Place the chicken in a large pot over medium-high heat and brown until golden.
Step 2
Add celery, onion, garlic, peppercorns, parsley, thyme, apple cider vinegar and water in a large saucepan with a lid, bring to the boil and simmer for 4 hours, until the chicken is very tender and separating easily from the bone.
Step 3
Transfer the chicken pieces to a large bowl. Strain the liquid and discard the bones. Separate chicken into bite sized pieces and add to separate bowls.
Step 4
Add the soup, taste and season accordingly
