Instructions

Step 1
In a bowl, toss the chopped strawberries with ¼ cup of the sugar. Let sit for about 15–20 minutes to macerate. Mash the strawberries lightly with a fork or blend briefly if you prefer smoother ice cream.
Step 2
In a separate large bowl, whisk together the remaining ½ cup sugar, heavy cream, milk, vanilla extract, lemon juice (if using), and a pinch of salt. Stir in the mashed strawberries and their juices.
Step 3
Pour the mixture into your ice cream maker and churn according to the manufacturer’s instructions (usually 20–25 minutes). Transfer to a container and freeze for at least 2 hours for firmer ice cream.
Step 4
Let the ice cream sit at room temperature for 5 minutes before scooping. Enjoy!
