Instructions
Step 1
1. Start by placing the heavy cream in the freezer with your whisk for about 15 minutes. To ensure the cream whips nicely into whipped cream, I always use a cream with at least 30% fat content.

2. Meanwhile, crush the biscuits and set aside.
Step 3
3. Wash and split your vanilla pod by slicing it down the middle with a knife, then scrape along the inside with the knife blade to extract the vanilla. Set aside.

4. Wash and cut some of the strawberries into thin slices, and dice the rest into small pieces. Set aside.

5. Remove the cream from the freezer and whip it with the mascarpone, powdered sugar, and vanilla.

6. In the glass cups, place a layer of crushed biscuits at the bottom, and arrange the slices of strawberries around the edges to form a circle.

7. Add the diced strawberries on top, followed by some strawberry coulis.

8. Add a layer of the whipped cream mixture on the sides and then on top.
Step 9
9. Add another layer of biscuits, strawberries, and coulis in the center.
Step 10
10. Cover everything with the cream mixture, and smooth out the top to have a neat and smooth surface.

11. You can decorate the top with a few strawberry pieces and a mint leaf :)

12. Chill in the refrigerator for at least 2 hours before serving, and enjoy!
