Instructions
Step 1
1. Heat small pot to medium-high. Add blueberries, maple syrup, juice from lemon, and zest from lemon. Bring to a boil, then reduce heat to low. Simmer 10-12 minutes, stirring often. Carefully mash some blueberries as it cooks. Cook until jam has thicker consistency. Remove from heat and set aside.

2. Preheat oven to 350°F. Line 8x8 baking dish with parchment paper.

3. In a medium mixing bowl, combine oats, almond flour, baking powder, cinnamon, and salt.

4. In a small mixing bowl, add melted butter, maple syrup, and vanilla. Whisk until well combined.
Step 5
5. Add wet ingredients into dry ingredients bowl. Mix until combined; should be a dough consistency.
Step 6
6. Add about 2/3 of oat mixture to prepared baking dish. Use bottom of the measuring cup to press into an even layer. Pour jam and spread evenly across oats. Crumble on remaining oat mixture.
Step 7
7. Bake 23-25 minutes until golden. Make sure to check on it periodically. If the top starts to become too dark, cover with foil.
Step 8
8. Allow to fully cool before cutting; otherwise, the bars may crumble apart.
