1. Sauté the rice

• In a medium saucepan, melt the butter over medium heat.

• Add the rice and stir constantly for about 4–5 minutes, until it turns golden and smells nutty.

• Add in chopped onion and garlic, cook 1–2 minutes more.

2. Add seasonings & liquid

• Stir in tomato sauce, chili powder, cumin, paprika, and salt.

• Pour in chicken broth and stir to combine.

• Bring to a gentle boil.

3. Simmer & steam

• Reduce heat to low, cover, and simmer for 18–20 minutes or until liquid is absorbed.

• Turn off heat and let it sit (covered) for 5 minutes.

4. Fluff and serve

• Fluff with a fork. Stir in peas or corn if using, and cover for 2–3 minutes until warmed through.
