This potato salad is only available by wholesale, unlike some of their other side dishes. I was obsessed with this one, so I took a picture of the ingredient list and tried to figure out how to recreate it at home!

Instructions

Step 1
wash and slice redskin potatoes about 1/8th inch thick (think scalloped potatoes)

place sliced potatoes in a large pot of cold water; bring to a boil until softened. (you can break the potatoes with a spoon, but the skins aren't falling off yet; roughly 20 minutes)
Step 3
drain potatoes and cool in refrigerator or an ice bath.
Step 4
once cooled, stir in remaining ingredients, adjusting to taste.
Step 5
refrigerate for 1 to 6 hours to meld flavors.
