Fermented Chilli Carrot and Beetroot

Instructions
Step 1
Grate the carrots and beetroots and add it to a large bowl.
Step 2
Add the garlic, chilli, salt, kefir and onion to the veggies and mix through with clean hands until combined.
Step 3
Begin to pack the veggie mix into a clean glass jar. Press the mixture down with clean hands and be sure to leave a 3-4 cm gap up the top to allow for the fermentation expansion.
Step 4
Cover the veggies with a little filtered water, just enough to cover them.
Step 5
Slice 1 carrot into large matchsticks and press into the jar, these carrot sticks should weigh down the veggies to keep them under the liquid.
Step 6
Close the lid tightly, clean the outside of the jar and place on a shelf in your pantry and allow it to ferment for 3-4 days.
Step 7
When ready, place in the fridge to be stored.
Step 8
Enjoy it with as a side to any savoury meal.
