Instructions
Step 1
Heat the milk until it is warm, but not hot. Add the dry yeast and sugar. Stir with a whisk until the sugar and yeast dissolve. Cover the bowl with a clean towel and let it stand in a warm place for about 10-15 minutes, until the yeast becomes active (the surface should foam).
Step 2
In a large bowl, combine the flour (start with four cups; the exact amount will depend on the size of the eggs), salt, cinnamon, butter, and room-temperature eggs. Pour the active (foamy) yeast mixture into the bowl.
Step 3
Mix and knead to a soft, elastic dough. At first, the dough may seem too soft and sticky, but the longer you knead, the stronger the gluten strands will become - the dough will gradually become smooth, non-sticky, but still very soft. Knead for about 10 minutes; you can use an electric mixer (or a stand mixer with a dough hook attachment). If the dough is still too sticky, mix in a little more flour (up to half a cup).
Step 4
Grease a large bowl with a little oil. Place the soft dough ball into it and turn it over several times to coat the entire surface with oil.
Step 5
Cover the bowl with a towel and let it stand in a warm place for about an hour, until the dough has doubled in size.
Step 6
Mix the cinnamon filling ingredients. Shape the buns. Knead the risen dough lightly and roll it out into a large rectangle (about 35x45 cm or similar size).
Step 7
Spread the filling on the dough Starting from the long edge, roll the dough with the filling into a roll.
Step 8
Cut the roll into approximately 8-9 equal pieces.

Arrange the sliced buns neatly in a baking dish with higher edges (20x30 cm).
Step 10
Cover the baking dish with a towel and let it rise at room temperature for about 30 more minutes.
Step 11
Bake. Preheat the oven to 180 °C (top and bottom heat). Bake in the preheated oven for about 35 minutes, the buns will rise and their surface will become beautifully golden. Insert a knife and check if the buns are cooked. If the knife comes out clean or is only slightly coated with dough, turn off the oven. Leave the buns to rest for 10 minutes.
Step 12
Place all the ingredients for the frosting in a food processor. Start mixing slowly, gradually increasing the speed until you have a thick cream.
Step 13
Spread a little more of the prepared cream on the surface of the warm, soft buns. Enjoy immediately.
