Instructions

Step 1
Place chocolate and coffee in a deep measuring jug and microwave on medium for ~5 minutes or until chocolate is melted, stirring frequently. Allow to cool.
Step 2
Beat eggs and yolks until very light and fluffy, about 10 minutes.
Step 3
Add sugar and beat until the mixture is shiny, about 5 minutes.
Step 4
Add melted chocolate, rum and vanilla. Mix until thoroughly blended.
Step 5
Sprinkle gelatine over water in a glass measuring jug. Let stand for 3 minutes, then microwave on medium for about 45 seconds (WATCH CAREFULLY) or until the gelatine has melted.
Step 6
With mixer running, slowly beat gelatine into chocolate mixture.
Step 7
Beat cream to soft peaks and fold into chocolate mixture.
Step 8
Pour into a large serving bowl (or two medium-sized ones) and chill in fridge for at least 4 hours.
Step 9
Serve, garnished with whipped cream.
Step 10
Alternatively, to freeze the mouse, chill, then cover well and freeze for up to 3 weeks. Thaw in the refrigerator.
