Instructions
Step 1
Grate the carrots and the cheese.
Step 2
Mix them together in a bowl.
Step 3
Add 2 eggs, salt and pepper, and combine everything thoroughly.

Form about 9 small fritters from the mixture.
Step 5
Place them in the air fryer (or oven) and bake for 20 minutes at around 180°C (350°F).

Flip them halfway through baking, around the 10-minute mark.
Step 7
After flipping, you can enjoy them as-is, or top them like mini pizzas with ham, cheese, sausage, etc.
Step 8
Bake for another 10 minutes to melt and slightly crisp the toppings.
Step 9
Serve warm, optionally with garlic sour cream dip.
