Instructions
Step 1
Toast the slices of bread to desired crispiness.
Step 2
Bring a pot of water to a boil, then poach the eggs. Separately for the best results.
Step 3
Scoop out avocado flesh into a small bowl. Add in the lemon juice and season with salt and black pepper. Mash using a fork. Once mashed, mix through.
Step 4
Spread the sriracha mayo over the bread slices, then spread avocado mix over this. Place the poached egg on top. Sprinkle with seasoning and then sprouts. Cover with other bread slices then serve.
