Instructions
Step 1
Season chicken. Cook medium-high heat for 3-5 minutes each side. Set aside.
Step 2
Turn to medium heat. Add onions and carrots and cook for 3 minutes.
Step 3
Add garlic and ginger. Cook 1-2 minutes.
Step 4
Add curry paste. Stir for 30 seconds.
Step 5
Add chicken broth and coconut milk.
Step 6
Add rinsed rice, tsp salt and bring to a boil.
Step 7
Return chicken, add broccoli and potato. Reduce heat and simmer for 20 minutes.
