Instructions

Step 1
In a large stock pot, heat oil over medium heat. Add onion, carrot, jalapeno and chili powder. Cook until vegetables are softened, about 8 minutes, stirring frequently.
Step 2
Stir in bell peppers, celery, zucchini, garlic, oregano, basil and cumin. Cook for three minutes, stirring frequently. Pour in beer, bring to a simmer and cook for 10 minutes.
Step 3
Stir in chocolate, sugar bay leaves, tomatoes, beans and corn. Bring to a boil, reduce heat to low, cover and simmer for 30 minutes.
Step 4
Remove bay leaves and serve.
Step 5
May be garnished with fat free plain yogurt, chopped green onions and or grated cheddar cheese.
