Instructions

Step 1
Sauté the vegetables: Heat the olive oil or butter in a large pot or Dutch oven over medium heat. Add the diced onion, carrots, and celery and cook until softened, about 5-7 minutes. Add garlic & broth: Add the minced garlic and cook for an additional minute, until fragrant. Simmer with broth and seasonings: Pour in the chicken broth and add the dried thyme, poultry seasoning (if using), and bay leaves (if using). Bring the mixture to a boil, then reduce heat and simmer for 10-15 minutes, or until the vegetables are tender. Add chicken and noodles: Add the cooked chicken and egg noodles to the pot. Stir to combine. Continue to simmer until the noodles are cooked through, about 15 minutes. Season and optional additions: Season the soup with salt and pepper to taste. If using, add the cannellini beans or crack eggs into the simmering soup 2-3 minutes before the noodles are finished cooking. Serve and garnish: Ladle the soup into bowls and garnish with fresh parsley.
