2 cupswhole rolled oats
not instant

2 tablespoonsground flaxseed

6 tablespoonswater
warm

¼ cuproasted almond butter

¼ cuptahini

7Medjool dates
soft, pitted

¼ cupcoconut oil

1 teaspoonvanilla extract

½ teaspooncinnamon

¼ teaspoonnutmeg

½ teaspoonsea salt

1 tablespoonsesame seeds

1 tablespoonchia seeds

1 tablespoonsunflower seeds

1 cupshredded coconut

⅔ cupchocolate chips

¼ cupchopped walnuts

¼ cupchopped pistachios
Instructions
Step 1
In a medium pan, toast the oats over low heat until just browned around the edges, about 1 to 2 minutes. Remove from the heat and set aside.
Step 2
In a small bowl, combine the flaxseed and warm water and set aside to thicken for about 5 minutes. In a food processor, combine the almond butter, tahini, dates, coconut oil, vanilla, cinnamon, nutmeg, and salt. Add the flaxseed mixture and blend until smooth.
Step 3
Add the seeds and coconut and pulse until combined. Add the oats and pulse until combined. Add the nuts and chocolate chips and pulse until combined.
Step 4
Push the mixture into a 9x9 baking pan and chill in the refrigerator until firm, at least 30 minutes.
Step 5
Remove from the fridge and cut into squares. Store in an air-tight container in the refrigerator or freezer.
