Mediterranean chicken skewers

Ingredients

Marinade

2.5 Ibsboneless chicken thighs

¼ cupza'atar spice

2 teaspoonsgarlic powder

½ teaspooncumin
optional

1 ½ teaspoonssalt

½ teaspoonblack pepper

1 tablespoonlemon juice
freshly squeezed

½ cupolive oil
Drizzle herb

2 tablespoonsdill
chopped

2 tablespoonscilantro
chopped

2 tablespoonsfresh mint
chopped

1 tablespoonlemon juice
or lime

¼ cupolive oil
For Serving
Instructions
Step 1
Combine the chicken, za'atar, garlic powder, cumin, salt, black pepper, lemon juice, and oil. Mix well and marinate for 4-12 hours or overnight.
Step 2
Preheat the grill to 450°F and thread the chicken onto skewers.
Step 3
If you are using wooden skew-ers, soak them in water for 30 minutes so they don't burn.
Step 4
Grill for 5-7 minutes per side, turning occasionally, until cooked through and a bit charred on the outside.
Step 5
While the chicken cooks, mix together the herb ingredients in a bowl, and spoon the fresh herbs over the hot skewers just before serving. (I used dried herbs and fresh mint, any combo herbs is fine )
