Marinate for about 6 hours
Step 2

Prep grill coals to one side for hot side. Place a piece of wood on top of the grates for the wood smoke. The other half is cold side where you will place the lamb to smoke for 45 minutes
Step 3
Cover and slow smoked for 45 minutes at 240 degrees until internal temp of 115 degrees. Hood vent over the hot coal side.
Step 4

Then rest for about 15 to 20 minutes
Step 5

Then finished over direct heat over coals until internal temp of 128 degrees
