Step 1
Pan-fry the onion and courgette, seasoned generously with salt and pepper, in the olive oil over a medium heat for about 10 minutes.
Step 2
Add chopped tomatoes and simmer for another 10 minutes, then season to taste.
Step 3
Meanwhile, dissolve the stock cube in the boiling water in a heatproof jug or bowl. Stir in the couscous and leave to stand for 5 minutes, then fluff up the couscous with a fork.
Step 4
Serve the ratatouille with the couscous, drizzled with a little olive oil, and sprinkled with pepper.
