Ingredients

4 cupsbroccoli florets
fresh or frozen
1yellow onion
small, diced
0.5 bagshredded carrots
1 tspgarlic powder
3 cupslow-sodium chicken broth
added to crockpot
1 cupchicken broth
mixed with, slurry
¼ cupcornstarch
1 tspsalt
½ tspblack pepper
½ tsppaprika
optional
1 cupheavy cream
or half-and-half
2 cupsshredded sharp cheddar cheese
8 ozcream cheese
cubed
Instructions
Step 1
Add broccoli, onion, shredded carrots, garlic powder, 3 cups of broth, salt, pepper, and paprika to crockpot.
Step 2
2. In a separate bowl, mix 1 cup chicken broth with ¼ cup cornstarch to make a slurry, then add to crockpot.
Step 3
3. Cook on HIGH for 3 hours, until broccoli is tender.
Step 4
4. (Optional) Blend with immersion blender for a smoother texture.
Step 5
5. Stir in cream cheese until melted.
Step 6
6. Add heavy cream and cheddar cheese. Stir until melted and creamy.
Step 7
7. Taste and adjust seasoning if needed. Serve hot.
