Instructions
Step 1
In a pan, dissolve the sugar and honey in the water, add the teabags and vanilla essence.


Step 2
Gently place the peaches in the pan and simmer for 4-6 mins depending on how ripe they are. Flip the peaches in the pan and continue to poach for a further 4-6 mins until soft. Remove the peaches and set aside to cool.
Step 3
Remove the teabags and rapid boil the liquid until it's reduced by half and becomes thick and syrupy.
Step 4
Spoon over the peaches and add a dollop of full fat Greek yoghurt to serve.
Step 5
Any left over syrup can be cooled, refrigerated for 3 days and used as a cordial or drizzle over yogurt.
