Creamy Green Pasta
6 steps
Cook:13min
One of my favourite mid-week meals. Healthy, easy, quick, cheap pasta.
It's extremely customisable: blitz some beans or chickpeas with greens into a creamy sauce and stir into whatever pasta you've got.

Instructions
Step 1
Put the pasta on to boil for 13 minutes in salted water
Step 2
Meanwhile, toast the seeds with 1 tbsp of oil, and the clove of garlic, bashed to release its flavour until it smells fragrant (around 3 minutes).
Step 3
Put the remaining ingredients apart from the cheese into a blender, including the water from the beans, with the garlic from toasting the seeds. Blend to a smooth purée.
Step 4
Drain the pasta, reserving some of the water.
Step 5
Put the pasta back into the pot and back on the heat, stir through the sauce, add a little pasta water to get a creamy texture and heat through
Step 6
Plate the pasta, sprinkle over the seeds and grate over the cheese.
