Instructions

Step 1
1. Cook the pasta Bring a large pot of salted water to a boil. Cook rigatoni until al dente. Reserve about Β½ cup of pasta water before draining.
Step 2
2. Make the truffle cream sauce In a large skillet, melt butter over medium heat. Add garlic and sautΓ© for 1 min (don’t let it burn). Pour in heavy cream, stirring gently. Add Parmesan and stir until melted into a smooth sauce.

3. Add truffle flavor Stir in truffle oil. If using truffle paste, whisk it in now for deeper flavor.
Step 4
4. Combine pasta & sauce Toss the pasta in the sauce, adding a splash of reserved pasta water to loosen if needed. Season generously with cracked black pepper and adjust salt.
Step 5
5. Plate it up Serve in warm bowls. Add a spoonful of black truffle paste (like in your picture) right on top. Finish with extra Parmesan and black pepper.
