Instructions

Step 1
Peel and cut the onions and aubergine into medium sized cubes. Grate the tomatoes and garlic
Step 2
Add some olive oil to a medium pot and add the onions. Cook till translucent and then add the Aubergines with some extra olive oil
Step 3
Cook the aubergine and onions for 10 mins
Step 4
Add the grated tomatoes and the garlic
Step 5
Dissolve the tomato paste in 2 cups of water. Add the tomato sauce to the casserole. Add salt and 7 spices
Step 6
Cover and cook for 20 mins or until the aubergine is cooked through and the sauce has thickened.
Step 7
Uncover and add the dried mint and let cook for a couple of minutes
