With a creamy and buttery texture, this dish makes a perfect alternative to potatoes. Full of protein and fibre and good source of iron and folate, this dish is ready in less than 10 minutes. Serve with fish, meat or vegetarian sausages.

Instructions
Step 1
Add the butterbeans, garlic powder, spring onions, lemon zest and water to a medium sized saucepan and heat to a simmer for 5 minutes.
Step 2
Remove from the heat and add the truffle oil and milk Using a potato masher, hand blender or food mixer, mix the ingredients to the desired consistency. Add a splash milk for a thinner consistency.
Step 3
Stir in the chopped spring onions and pepper to taste. Divide into four and serve.
