Ingredients

1 ½ cupsgluten-free rolled oats
1 cupplain pea protein powder
1 tspvanilla powder
or 2 tsp vanilla extract
½ tspcinnamon
optional, but helps mellow the pea flavor
½ cupnut butter
almond, peanut, or cashew
½ cupmaple syrup
or honey
2 Tbspcoconut sugar
or monk fruit/stevia to taste, adjust for sweetness
¼ cupunsweetened almond milk
add more if dough is too dry

Instructions
Step 1
Combine all dry ingredients in a bowl.
Step 2
Add nut butter and maple syrup/honey to the dry ingredients and mix well.
Step 3
Gradually add almond milk until the mixture forms a dough-like consistency.
Step 4
Press the mixture into a lined baking dish.
Step 5
Refrigerate for at least 1 hour.
Step 6
Cut into 8 bars and enjoy.
