Instructions

Step 1
Combine chickpea flour with cumin, coriander, garam marsala, curry powder, baking soda and gradually soda water to form a smooth batter.
Step 2
Mix in the salt and pepper, and vegetables. Stand for 5 minutes.
Step 3
Heat 3-4cm (1 1/2 inches) of oil in a deep frypan and fry small spoonfuls of the pakora mixture - in batches of 3-5 at a time - for about 3 minutes until golden and cooked through.
Step 4
Remove the pakoras from the oil with a slotted spoon. Shake off any excess oil and place them on paper towels to drain.
Step 5
Serve at once, accompanied by sweet chilli sauce or sweet and sour sauce, or prepare ahead and reheat in a 200C/400F oven for 5 minutes before serving.
