Instructions
Step 1
Melt butter over medium heat in a skillet.
Step 2
Add flour and cook for 1 minute then add milk and whisk until thickened.
Step 3
Add sour cream and chicken broth. Whisk into milk mixture until it thickens – about 2 min.
Step 4
Stir in chilies, salt, and pepper.
Enchiladas
Step 5
Preheat oven to 350 F.
Step 6
Mix ¼ cup sauce, chicken, corn, and 1 cup grated cheese with salt and pepper.
Step 7
Warm tortillas in the microwave or on stove top to warm thoroughly (will help prevent cracking when rolling).
Step 8
Smear bottom of baking dish with sauce.
Step 9
Divide filling between tortillas and roll them up.
Step 10
Place enchiladas in the dish, seam side down.
Step 11
Pour remaining sauce over top of enchiladas and scatter with remaining cheese.
Step 12
Cook for 20-25 minutes, until bubbly and golden.
