Instructions

Step 1
Place the beef, onion, garlic, mushrooms, broth, and seasonings in the slow cooker and stir to combine.
Step 2
Cover and cook on high for 3 to 4 hours or low for 6 to 8 hours.
Step 3
Add the rice and stir together. Cover and cook for another 45 minutes to 1 hour on high.
Step 4
Add the butter and Parmesan cheese and mix until smooth and melted. The risotto should have a creamy consistency. If it's too thick, stir in some additional broth or cream to loosen it.
