Bacon Cheeseburger Soup

Delicious soup that tastes just like a bacon cheeseburger, with potatoes of course!

Instructions
Step 1
Fry ground beef in a pot adding your favorite spices. I chose salt, pepper, garlic powder, and chopped onions seasoning
Step 2
Remove ground beef to a bowl or other container temporarily
Step 3
In the pot add celery, onions, and carrots to cook until celery and onions are see through. I also spiced this mix with salt, pepper, and garlic powder.
Step 4
Create a roux by adding the butter and flour to the veggie mix in the pot. Let cook until flour is cooked through
Step 5
Add cooked ground beef back into the pot
Step 6
Add prepped cubed potatoes to the pot
Step 7
Add chicken broth to the pot and stir until mixture in well combined
Step 8
Allow pot to come to a rolling boil and cook for 10 minutes or more to allow potatoes to cook through. Time could be more or less depending on heat. Check potatoes with a fork for doneness

Lower heat and add milk and sour cream to the pot
Step 10
Add Velveeta to the pot gently to not burn yourself with a splash
Step 11
Add bacon to the pot
Step 12
Stir mixture at medium to low heat continuously for a few minutes until the mixture is well combined and cheese is melted throughout
Step 13
Once combined, turn heat to low or off and allow the mixture to cool and thicken a bit
