Instructions
Step 1
Preheat air fryer to 200c
Step 2
Toss sweet potato cubes with olive oil, cumin, smoked paprika, chilli powder, salt & pepper.
Step 3
Roast for 20-25 minutes until tender and caramelised.
Step 4
Toss broccoli florets in olive oil, salt & pepper.
Step 5
Add to sweet potatoes for the last five minutes of roasting.
Step 6
Make couscous.
Step 7
In a small bowl whisk tahini, lime juice, honey and rice vinegar with 1-2 tbs water to make it smooth.
Step 8
In a large bowl combine all ingredients, topping with crumbled feta and drizzle with the dressing.
