Corn Dog Muffins

Makes 24 full size muffins. Simple Truth or Trader Joe’s, or other better-quality hot dogs. Heats well in hot logic. Freezes well. Not good to eat cold though.

Step 1

Preheat oven to 350.

Step 2

Finely shred carrot and mince spinach.

Step 3

Quarter hot dogs lengthwise and dice into small pieces.

Step 4

Combine dry ingredients, add yogurt, veggies, flax eggs and water, stir.

Step 5

Bake for 20-25min, sprinkle shredded cheese on top of muffins, bake 5 min.
