Instructions

Step 1
Mix all the dry ingredients in a bowl, create a well in the middle and add in the water. Mix until together, then use your hand to incorporate all the dry bits. Cover and leave to proof for 30mins.
Step 2
After 30 minutes, do a set of 4 stretch and folds then fold the dough over on itself a few times to create a ball. Let it rest for a further 30 mins. Preheat the oven with 2 pizza stones in it to 230°C.
Step 3
After the second rise, oil around the edge of the bowl and tip out onto a floured surface. Split the dough in half and place it on baking paper before putting it in the oven on the pre-heated pizza stones. Bake at 230°C for 8 mins, then 200°C for a further 15 mins. Let cool on a rack
