Instructions
Step 1
Chop 1 pound of bacon and cook it in a pot on medium heat until crispy, then set aside on paper towel.
Step 2
Leave about 3 to 4 tablespoons of bacon grease in pot.
Step 3
Add 1 cup diced onion and 1 tablespoon minced garlic, cook until onions are clear.
Step 4
Add 4 tablespoons of butter. Once melted, add 1/3 cup of flour, and whisk until smooth.
Step 5
Slowly whisk in 2 cups of 2% milk and 1 cup of heavy whipping cream.
Step 6
Add 3 cups of chicken broth and bring to a simmer.
Step 7
Add 4 cups cooked and peeled potatoes.
Step 8
Season with chicken bouillon powder, paprika, salt, and pepper.
Step 9
Add 1 cup freshly shredded cheddar cheese and most of crispy bacon, saving some for garnish.
Step 10
Serve once cheese melts, and top with extra cheese, bacon, chives or green onion, and sour cream.
