Ingredients
4 servings
1 tablespoonolive oil
1onion
finely chopped
2cloves garlic
crushed
1 teaspoonpaprika
2chorizo sausages
2chicken breasts
cut into large pieces
1 ½ cupsrice
400gcanned diced tomatoes
2 cupschicken stock
½ cupsoregano leaves
2 cupsbaby spinach
¼ teaspoontumeric
½ teaspooncumin
1 tablespoontomato paste
chilli flakes
lemon
parsley
Instructions
Step 1
Heat the olive oil in a pan over high heat. Add the onion, garlic, paprika and tomato paste.
Step 2
Then chicken and chorizo, tumeric and cumin, sauté for 5-10 minutes until golden.
Step 3
Add rice and tomatoes, stir to combine.
Step 4
Add stock and reduce heat to low. Cover and cook for 15 minutes or until rice is cooked.
Step 5
Stir through parsley and spinach. Squeeze lemon
