Instructions

Step 1
Preheat oven to 350°F.
Step 2
Prepare pasta according to package directions to 2 minutes from al dente.
Step 3
In a large skillet over medium-high heat, cook ground beef and add taco seasoning and water. Simmer until slightly thickened.
Step 4
Prepare a 3-quart casserole dish with nonstick cooking spray.
Step 5
Add cooked pasta, tomatoes with juices, beans, mixed vegetables, and 1 cup cheese to the skillet and mix.
Step 6
Pour the mixture into the prepared casserole dish.
Step 7
Sprinkle with remaining 1 cup cheese and bake 20-35 minutes, until hot and bubbly.
Step 8
Serve hot and refrigerate leftovers.
