450gmicrowave long-grain rice
1 Tbspvegetable oil
500gbeef mince
2 Tbspbrown sugar
80mlhoisin sauce
60mlsoy sauce
60mlwater
2eggs
lightly whisked
3 tspfresh ginger
finely grated
2garlic cloves
crushed
100gbroccoli
finely chopped
150gfrozen baby peas
2green shallots
thinly sliced
Sesame seeds
toasted, to serve, optional
Instructions
Step 1
Tear open the top of the rice packet a little and place it in the microwave. Cook on high for 2 minutes or until warmed through. Squash the bag slightly to break up the grains inside.
Step 2
Meanwhile, heat the oil in a large frying pan or wok over high heat. Add the beef mince and cook, breaking up the mince with a wooden spoon, for 3-4 minutes or until starting to brown.
Step 3
While the mince is cooking, whisk the sugar, hoisin, soy sauce and water in a jug.
Step 4
Push the mince to one side of the pan. Add the egg to the other side and cook, breaking up the egg to scramble, for 1 minute or until firm. Add the ginger and garlic and cook, stirring, for 30 seconds or until everything is well combined.
Step 5
Add the broccoli to the pan. Stir fry for 1-2 minutes or until well combined. Add the rice, peas, shallot and sauce mixture. Cook, tossing, for 1-2 minutes or until well combined and heated through. Divide fried rice among serving bowls. Sprinkle with sesame seeds, if using, to serve.
