Instructions
Step 1
Cook the chicken breast and let it cool, then chop into bite-sized pieces.

Chop the cucumber, red onion, red and green bell peppers, and spring onion.

Mix the chicken and chopped vegetables in a large bowl.

Add the sweetcorn and chopped coriander.
Step 5
In a separate bowl, combine Greek yogurt, light mayo, minced garlic, chili powder, cumin, paprika, and lime juice to make the dressing.

Pour the dressing over the chicken and vegetables, mixing until everything is well coated.
